My Menu is Set, and Crunch Time Begins Tomorrow…It’s Almost Thanksgiving!

This is it!  Thanksgiving is only three days away!  My favorite holiday on the face of this Earth is almost here, and Thanksgiving dinner “crunch time” begins tomorrow!  Contrary to all practical and popular advice, I have finalized my menu full of recipes I’ve never prepared before (my culinary sick thrill is to try out new recipes for big occasions).  I kept adding new dishes over the weekend (I just can’t help myself!), but I am almost positive this is the final version of my Thanksgiving feast:

Coconut Cream Bread Pudding

Paula Deen’s Coconut Cream Bread Pudding is one of those perfect desserts – it is simple to make, should be made ahead of time, and tastes absolutely incredible!

Crusty French bread is cubed and soaked in a combination of coconut milk, cream of coconut, eggs, nutmeg, mace, and coconut flakes.  Then the whole dish is baked gently in a water bath until it has become coconut custard bliss!  Normally, bread pudding is served warm, fresh from the oven.  But this bread pudding breaks that rule – it is recommended you allow the pudding to cool completely, then refrigerate it until ready to serve. 

The result?  A heavenly dessert that tastes like a cross between bread pudding and coconut cake!  Paula recommends you top the bread pudding with additional toasted coconut and chocolate sauce, but I think it is absolutely perfect without the extra garnishes.  Click here for Paula’s recipe on FoodNetwork.com, and here to watch a video of Paula preparing this wonderful dessert on her show.  This recipe is already in my recipe box with my other “go-to desserts” – desserts that are simple to throw together, but taste absolutely incredible and make a fabulous impression!  And the best part?  Since it is served cold, it is comfort food that can be served year-round!
